Roasted Shrimp and Broccoli

Dinner will be on the table fast by simply roasting the shrimp and broccoli together.  Makes 4 servings in 15 minutes.

What you’ll need:

  • 5 cups broccoli florets
  • 1 tablespoon grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 pounds peeled and deveined large shrimp
  • cooking spray
  • 2 tablespoons olive oil
  • 1/4 teaspoon crushed red pepper

What you’ll do:

  • Preheat oven to 425 degrees.
  • Cook broccoli for 1 minutes in boiling water.
  • Drain and put in ice water.  Drain again.
  • Combine 1 1/2 teaspoons lemon rind, lemon juice, 1/4 teaspoon salt and pepper each in a medium bowl.
  • Add shrimp; toss to combine.
  • Spread broccoli and shrimp on a baking pan coated with cooking spray.
  • Bake for 8 minutes or until shrimp are done.
  • Combine oil, 1 1/2 teaspoons rind, 1/4 teaspoon each of salt and pepper, and red pepper, in a large bowl.
  • Add the broccoli and shrimp, tossing to combine.
