Dinner will be on the table fast by simply roasting the shrimp and broccoli together. Makes 4 servings in 15 minutes.
What you’ll need:
- 5 cups broccoli florets
- 1 tablespoon grated lemon rind
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 pounds peeled and deveined large shrimp
- cooking spray
- 2 tablespoons olive oil
- 1/4 teaspoon crushed red pepper
What you’ll do:
- Preheat oven to 425 degrees.
- Cook broccoli for 1 minutes in boiling water.
- Drain and put in ice water. Drain again.
- Combine 1 1/2 teaspoons lemon rind, lemon juice, 1/4 teaspoon salt and pepper each in a medium bowl.
- Add shrimp; toss to combine.
- Spread broccoli and shrimp on a baking pan coated with cooking spray.
- Bake for 8 minutes or until shrimp are done.
- Combine oil, 1 1/2 teaspoons rind, 1/4 teaspoon each of salt and pepper, and red pepper, in a large bowl.
- Add the broccoli and shrimp, tossing to combine.
