High-Speed Salmon Grill

Maple syrup is the secret ingredient in this 5-ingredient dish.  Asparagus adds a pop of green to the plate, simple throw them on the grill with the salmon.  Serves 4.

What you’ll need:

  • 1/4 cup barbecue sauce
  • 2 tablespoons maple syrup
  • 1/4 teaspoon orange zest
  • 1 pound salmon pieces
  • 1 tablespoon chopped basil

What you’ll do:

  • Heat grill to medium heat.
  • Mix together the barbecue sauce, maple syrup and orange zest.
  • Place fish skin side down on the oiled grates.  Brush the fish with half of the sauce.
  • Grill 10 minutes or until fish flakes easily.  Brush with remaining sauce.
  • Serve with a sprinkle of basil.

BLT Salad

The classic sandwich transformed into a layered salad.  Choose center-cut bacon for a leaner option and for easier clean-up, cook the bacon in the oven at 350 degrees.  Makes 4 salads.

What you’ll need:

  • 8 slices center-cut bacon
  • 4 slices bread
  • 1 1/2 cups cherry tomatoes
  • 8 cups torn romaine lettuce
  • 1/3 cup blue cheese crumbles (or goat cheese)
  • 1/4 cup cider vinegar
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 1 teaspoon Dijon mustard
  • salt and pepper

What you’ll do:

  • Cook bacon in the oven or stove-top until crisp.  Drain on paper towels.
  • While the bacon is crisping, toast the bread and halve the cherry tomatoes.
  • Break bacon into 2-inch pieces.
  • On plates, layer the toast, romaine, tomatoes, bacon and cheese.
  • Combine the vinegar, olive oil, sugar, Dijon and salt and pepper (to taste).
  • Drizzle vinaigrette on salads.

Strawberry-Turkey-Brie Panini

Strawberries are in season so it only makes since to add them into dinner.  Strawberries are added to this pressed sandwich to add sweetness.  Recipe makes 4 sandwiches.

What you’ll need:

  • 4 ounces brie
  • 8 slices of bread
  • 8 ounces thinly sliced smoked turkey
  • 8 fresh basil leaves
  • 1/2 cup sliced strawberries
  • 1 tablespoon butter

What you’ll do:

  • Trim and discard the rind from the brie.  Slice into thin slices
  • Layer 4 of the bread slices with turkey, basil, strawberries and brie.
  • Top with remaining bread slices.
  • Melt butter in panini press (or skillet) and spray with nonstick cooking oil.
  • Cook sandwiches in a pre-heated panini press (or in a skillet, pressing down on sandwiches while cooking) until golden on each side.

Skillet Enchilada Pasta

Healthy, Mexican and pasta all in one.  You won’t miss the meat in this dish that’s ready in 20 minutes.  Serves 6.

What you’ll need:

  • 1 pound whole wheat pasta, cooked according to package
  • 3 cups green enchilada sauce
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 yellow onion, thinly sliced
  • 3/4 cup frozen corn kernels
  • 1 small red bell pepper, seeds removed and chopped
  • 1 can black beans, drained and rinsed
  • 2 tomatoes, seeds removed and chopped
  • 1 cup feta cheese
  • fresh cilantro (optional)
  • crushed tortilla chips (optional)
  • sour cream or Greek yogurt (optional)
  • hot sauce (optional)

What you’ll do:

  • In a large skillet heat the olive oil over medium-high heat.  Add sliced onion and saute for about 3 minutes.
  • Fold in the red pepper and saute for 3 more minutes.
  • Stir in the corn and black beans.  Season with salt and cumin.
  • Pour in the enchilada sauce and bring to boil.
  • Fold in cooked pasta, reduce heat to medium-low.  Cover and cook for 5 minutes.
  • Serve with chopped tomatoes, feta, cilantro, tortilla chips, sour cream and hot sauce (all to taste).

Pepperoni, Onion and Olive Pizza

Jazz up a classic pizza with onions and olives.  A pre-made crust takes all the work out of this dinner so you can enjoy your Friday night.  Serves 6.

What you’ll need:

  • 1 pre-made pizza crust
  • 1/2 cup marinara sauce
  • 1/2 cup thinly sliced sweet onion
  • 2 ounces pepperoni slices
  • 10 olives, pitted and halved
  • 3/4 cup shredded Italian cheese blend

What you’ll do:

  • Preheat oven to 450 degrees.
  • Spread the sauce evenly over the crust.
  • Top with onion, pepperoni and olives.  Sprinkle with cheese.
  • Bake until the crust is crisp and the cheese is melted.

Rotisserie Chicken with Peaches, Walnuts and Basil

Store-bought chicken is made interesting with sweet peaches, fresh basil and crunchy walnuts.  Serves 4.

What you’ll need:

  • 1 tablespoon olive oil
  • 1 tablespoon peach (or apricot) jam or jelly
  • 1/4 teaspoon cayenne (optional)
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 3 ripe peaches, peeled and sliced
  • 1 rotisserie chicken, skinned and quartered
  • 1/2 cup basil leaves, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup glazed walnuts

What you’ll do:

  • In a medium bowl, whisk together the olive oil, jam, cayenne, vinegar and salt.  Add peach slices and toss to coat.
  • Arrange chicken on a large platter.  Evenly spoon the peach mixture over top – drizzling with leftover dressing.
  • Sprinkle with basil, feta and walnuts.

Pasta with Shrimp and Spinach

Crumbled feta add saltiness to this unexpected pasta dish.  Makes 4 servings in 25 minutes.

What you’ll need:

  • 3/4 pound penne pasta
  • 2 tablespoons olive oil
  • 3/4 pound peeled, deveined shrimp
  • 2 cloves garlic, sliced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups baby spinach
  • 1/2 cup crumbled feta
  • 1/2 cup halved kalamata olives (optional)

What you’ll do:

  • Cook the pasta according to package directions; drain and return to pot.
  • Heat the oil in a large skillet over medium high heat.
  • Cook the shrimp, garlic, crushed red pepper and 1/4 teaspoon salt for 4-6 minutes, or until shrimp are pink.
  • Toss the pasta with the shrimp, spinach, feta and olives.
