Grilled Chicken Thighs

Labor Day weekend feels like the end of summer to me.  Fire up the grill this weekend and celebrate the final weekend before Fall begins to arrive.  This recipe makes 5 servings and is perfect alongside about any side dish you can imagine.

What you’ll need:

  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 chicken thighs (boneless and skinless)

What you’ll do:

  • Combine all the spices in a small bowl.
  • Rub the spice mixture evenly over all the chicken.
  • Allow the chicken to marinate for 4 hours in the fridge (ziplock storage bags are perfect for this)
  • Grill over medium-high heat for about 8-10 minutes on each side or until cooked through.

Salami and Cream Cheese Sandwich

Here’s another lunch box idea.  Along with the sandwich, pack some grape tomatoes, a sliced kiwi and a few animal crackers to keep your little one full all day.  Recipe makes one sandwich but it’s easy to make more.

What you’ll need:

  • 2 slices whole-grain bread
  • 2 tablespoons cream cheese
  • 2 slices salami
  • 2 leaves lettuce

What you’ll do:

  • Form a sandwich with all of the ingredients.

Other sandwich ideas:  sliced turkey with pesto mayonnaise, or almond butter and apple butter.

Spaghetti with Spinach and Sausage

This is the easiest spaghetti recipe you’ll ever find!  You won’t have to slave over a hot stove browning the meat.  Recipe serves 4.  Serve with apple slices.

What you’ll need:

  • 8 ounces spaghetti noodles, broken in half
  • 1 cup marinara sauce
  • 4 fully cooked chicken sausage links, sliced
  • 8 cups spinach, torn (about 5 ounces)

What you’ll do:

  • Cook the spaghetti according to package directions.
  • Drain and return to pot.
  • Add the marinara sauce, sliced sausage and spinach.
  • Cook until the spinach is wilted.

Grilled Sweet Potato Fingers

This is a perfect side dish for a week night or the weekend.  Serve the sweet potato fingers with some barbecue sauce for dipping.  Or make them a little sweet by dusting with cinnamon before grilling.  Recipe serves 8.

What you’ll need:

  • 4 sweet potatoes (optional:  peel potatoes)
  • 2 tablespoons olive oil
  • 1/4 teaspoon cayenne (optional)
  • salt
  • pepper

What you’ll do:

  • Preheat your grill to medium-high heat (or preheat your oven to broil).
  • Cut each sweet potato in half and then cut each half into 6 wedges (each potato should make about 12 “fingers”).
  • Put the potatoes into a large bowl and mix with oil, salt, pepper and cayenne (if using).
  • Grill or broil, turning often, for about 10 minutes (or until easily pierced with a knife).

Black Bean Burrito Bake

This is sure to become a family favorite!  Recipe serves 4.

What you’ll need:

  • 1 chipotle chile in adobo sauce**
  • 1/2 cup fat-free Greek yogurt
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup frozen whole-kernel corn, thawed
  • 4 (8-inch) flour tortillas
  • 1 cup salsa
  • 1/2 cup shredded Monterey Jack cheese

What you’ll do:

  • Preheat the oven to 350 degrees.
  • Chop chile and combine in small bowl with Greek yogurt.  Let stand 10 minutes.
  • Place half of the beans in a food processor; process until finally chopped (or mash with a fork).
  • Add the chopped (or mashed) beans, remaining beans and corn to the Greek yogurt mixture.
  • Spoon 1/2 cup bean mixture down the center of each tortilla.  Roll up tortillas and place seam side down in baking dish (11 x 7) that’s been coated with cooking spray.
  • Spread salsa over tortillas and sprinkle with cheese.
  • Cover and bake for 20 minutes or until thoroughly heated.

**  Chipotle chiles are found canned.  Small amounts are usually used so freeze the remaining chiles individually in plastic bags.  Simply thaw a bag when you need a chile.

Fruit Salad with Yogurt

This recipe is quick and easy and perfect for a weekday breakfast or a weekend brunch.  Feel free to switch up the fruit for what you can find or your favorites.  Recipe makes 8 servings.

What you’ll need:

  • 4 cups pineapple chunks
  • 1 quart strawberries, hulled and cut in half
  • 3 cups seedless green grapes
  • 2 mangoes, peeled and sliced
  • 8 ounces fresh raspberries
  • 2 cups fat free Greek yogurt
  • 1 tablespoon brown sugar
  • 1 tablespoon honey

What you’ll do:

  • Toss the fruit together in a large bowl.
  • Spoon yogurt into a separate serving bowl and top with brown sugar and honey.
  • Serve the fruit with the yogurt mixture.

Avocado and Cheese Roll-Ups

Can you believe the start of the school year is here?  This roll-up is perfect to pack in a lunch box or save this recipe for an easy dinner idea.  Recipe makes 1 roll up but it’s easy to simply to make more.  Simply throw an orange and some red pepper slices into the lunch box to complete this meal.

What you’ll need:

  • 1 8-inch whole-wheat wrap
  • 1/4 cup grated cheddar cheese
  • 1/4 avocado, sliced
  • 1 carrot, shredded
  • salt
  • pepper
  • 1 tablespoon pest

What you’ll do:

  • Top the wrap with the cheese, avocado and shredded carrot.
  • Sprinkle with salt and pepper.
  • Roll up the wrap and slice into pieces.
  • Serve with pesto for dipping.

Tip:  To keep the avocado from browning, squeeze lime juice over the avocado slices.

Other roll up ideas:  Bacon, lettuce, and tomato with barbecue sauce for dipping, or rotisserie chicken, guacamole, and sour cream with salsa for dipping.
