Chicken Wraps with Mango-Chutney

Perfect for lunch or dinner, this sweet and spicy wrap will be a new favorite.  Recipe makes 4 wraps.

What you’ll need:

  • 2 (6-ounce) boneless, skinless chicken breast halves
  • 1 tablespoon curry powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/2 cup plain Greek yogurt (non-fat or 2%)
  • 1/4 cup mango chutney
  • 3 tablespoons sliced green onions
  • 1 (8.8 ounce) package naan bread
  • 2 cups mixed salad greens

What you’ll do:

  • Place chicken between 2 sheets of plastic wrap.
  • Pound to 1/2-inch thickness using a meat mallet or small skillet.
  • Cut each in half crosswise.
  • Combine the curry powder, salt and 1/4 teaspoon pepper.
  • Sprinkle the curry mixture over both sides of the chicken.
  • Heat a large nonstick skillet over medium-high heat.
  • Add the oil and swirl to coat.
  • Add the chicken to the pan.
  • Cook 3 minutes on each side or until done.
  • Remove from the pan and let stand 5 minutes.
  • While the chicken is resting, combine the yogurt, chutney, green onions and 1/4 teaspoon pepper in a small bowl.
  • Warm the naan according to package directions.
  • Cut in half crosswise.
  • Spread the yogurt mixture over the naan halves.
  • Top evenly with the greens and chicken.
  • Roll up and serve.

Turkey Meatball Reuben Sub

Quick and easy but totally crave-worthy.  Recipe makes 4 sandwiches.

What you’ll need:

  • 2 teaspoons paprika
  • 1/2 teaspoon ground coriander
  • 1 teaspoon minced garlic
  • 3/4 teaspoon pepper
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1 pound ground turkey
  • 4 (3-ounce) whole wheat sub rolls
  • 1 1/3 cups packaged coleslaw
  • 1/4 cup reduced-fat Thousand Island dressing
  • 4 (1-ounce) slices Swiss cheese

What you’ll do:

  • Preheat the oven broiler.
  • Combine 1 1/2 teaspoons paprika, coriander, garlic, pepper, sugar, salt, ground red pepper and turkey in a large bowl.
  • Shape into 16 meatballs (about 1 heaping tablespoon each).
  • Place meatballs on a broiler pan coated with nonstick cooking spray.
  • Broil for 8 minutes or until done, turning once.
  • While the meatballs cook, hollow out the bread, leaving a 1/2-inch shell.  (Reserve the bread for another use – like bread crumbs!)
  • Combine the coleslaw, dressing and 1/2 teaspoon paprika.
  • Arrange 4 meatballs and 1 slice of cheese on the inside of each roll.
  • Place under the broiler for 1 minute or until the cheese melts.
  • Divide the slaw among sandwiches.

Thai Beef Rolls

These wrap sandwiches take only minutes to prepare – making them perfect for lunch or dinner.  Recipe makes 4 wraps.

What you’ll need:

  • 1 1/2 tablespoons lime juice
  • 1 tablespoon dark sesame oil
  • 1 tablespoon fresh ginger
  • 1 tablespoon minced garlic
  • 2 teaspoons fish sauce
  • 3/4 teaspoon sugar
  • 4 (8-inch) whole-grain tortillas
  • 2 cups lettuce leaves
  • 12 ounces thinly sliced deli roast beef
  • 1/2 cup shredded carrots
  • 1/4 cup chopped mint

What you’ll do:

  • Combine the lime juice, oil, ginger, garlic, fish sauce and sugar in a small bowl, stirring with a whisk.
  • Brush each tortilla lightly with 2 teaspoons of the lime juice mixture.
  • Arrange 1/2 cup lettuce on each tortilla and top with 3 ounces of the deli meat.
  • Combine the carrots and mint.
  • Combine about 3 tablespoons of the carrot-mint mixture on top of the meat.
  • Drizzle each with about 1 tablespoon of the remaining lime mixture.
  • Roll and serve.

Pizzadillas

You can’t go wrong with cheese and pepperoni.  Complete the meal with steamed broccoli or carrot sticks with light ranch dressing.  Recipe serves 4.

What you’ll need:

  • 1 tablespoon canola oil
  • 4 (8-inch) whole wheat tortillas
  • 1 1/2 cups shredded mozzarella cheese
  • 1 ounce turkey pepperoni
  • 1 cup marinara sauce

What you’ll do:

  • Preheat the oven to 400 degrees.
  • Brush the canola oil over a baking sheet.
  • Place the tortillas on the baking sheet.
  • Sprinkle 3 tablespoons of cheese on each tortilla.
  • Divide the pepperoni among the tortillas.
  • Top the pepperoni with 3 more tablespoons of cheese.
  • Bake for 5 minutes.
  • Remove from the oven and carefully fold each tortilla in half.
  • Bake 10 more minutes, or until crispy and browned.
  • Serve with the marina sauce.

Grilled BBQ Chicken Sandwich with Spicy Avocado Spread

The spicy avocado spread has tons of flavor – but if you’re running short on time, use prepared guacamole from the grocery store or simply top the sandwich with avocado slices.  Serve baked potato chips on the side.  Recipe serves 4.

What you’ll need:

  • 4 (3-ounce) boneless, skinless chicken cutlets
  • 1/4 cup barbecue sauce
  • 4 slices sharp cheddar cheese
  • green leaf lettuce
  • tomato slices
  • 4 white-wheat hamburger buns

For the avocado spread:

  • 1 ripe, peeled avocado, coarsely mashed
  • 1 tablespoon minced jalapeno
  • 1 tablespoon minced red onion
  • 1 1/2 tablespoons lime juice
  • 1 garlic clove, minced
  • 2 teaspoons minced cilantro
  • 1/8 teaspoon salt

What you’ll do:

  • Preheat the grill.
  • Brush both sides of the chicken cutlets with barbecue sauce.
  • Place chicken on the grill that has been coated with cooking spray.
  • Cook 3-4 minutes on each side or until cooked through.
  • Place a slice of cheese on each chicken cutlet during the last minute of cooking.
  • For the avocado spread, combine all ingredients in a bowl, stirring well.
  • To assemble the sandwiches, top the bottom half of each bun with lettuce, tomato and a piece of grilled chicken.
  • Top the chicken with about 2 1/2 tablespoons of the avocado spread and then the top of the bun.

Avocado and Tomato Grilled Cheese Sandwiches

Don’t let April end without celebrating National Grilled Cheese Month!  Serve with a fruit salad.  Recipe makes 4 sandwiches.

What you’ll need:

  • 3 ounces white cheddar cheese, shredded (about 3/4 cup)
  • 8 slices multi-grain bread
  • 8 thin tomato slices
  • 1 ripe avocado, peeled and cut into slices
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • cooking spray

What you’ll do:

  • Sprinkle 3 tablespoons of cheese over 4 slices of bread.
  • Top with 2 tomato slices.
  • Arrange the avocado evenly over the tomato.
  • Sprinkle evenly with salt and pepper.
  • Top with the remaining 4 slices of bread.
  • Lightly coat the outside of the sandwiches with cooking spray.
  • Heat a grill pan over medium heat.
  • Cook 3 minutes on each side or until the bread is toasted and the cheese has melted.
  • Cut each in half and serve.
